Gelo di Melone

Light and refreshing, elegant, and a conversation starter!

Gelo di Melone or Sicilian Watermelon Pudding

Makes 4 servings

3 cups watermelon juice from 4-5 cups of cubed watermelon

1/3 cup cornstarch

1/2 cup sugar

zest of one lime

1 oz. chopped chocolate

2 Tbls. chopped pistachios

Puree the watermelon in a food processor or blender and strain to get 3 cups.

Remove one cup of this juice and pour it into a small bowl. Add the cornstarch and stir to break up any lumps. Let stand for 20 minutes.

Pour the rest of the juice into a saucepan and add the sugar and lime zest. Stir to dissolve the sugar.

Bring to a boil, reduce to a simmer and slowly drizzle in the cornstarch/juice mixture.

Increase the heat to medium and stir with a wooden spoon until it coats the back of a metal spoon and the liquid is clear, not cloudy. You don't want any cornstarch flavor. Let it bubble for a bit, then remove from heat.

Ladle into parfait glasses, ramekins, or your favorite dessert cups.

Refrigerate for at least 3 hours.

Decorate with chopped chocolate and pistachios.

Impress your guests!
